Squares Cheese And Onion

Ingredients

12 Small Tartlets
3 onions, cut into thick 1cm slices
3 tbsp olive oil, extra for drizzling
3 – 4 sprigs of thyme leaves
Salt and pepper
1 cup (250ml) of red wine
3 tbsp brown sugar
3 Brown Blue Ribbon Squares Goats cheese

Method

Preheat the oven on 180°C
Place the sliced onion rounds on a lined baking tray and drizzle with olive oil. Add thyme and roast until soft, 15 minutes.
In a small pot, add the red wine, brown sugar and 3 tbsp olive oil. Leave on high heat until sticky and reduced, 10 minutes.
Open the Squares and press out rounds to fit into a muffin tray. Spray the muffin tray with non-stick spray and place into muffin tray. Add red onion slices onto bread rounds and drizzle with 30mls of red wine reduction. Finish with a 1cm goats cheese slice on top.
Bake in the oven for 10 minutes.
