1 packet Blue Ribbon Multigrain Squares
1 1/2 Tbsp Olive oil
1 Aubergine, medium sized
1 Jar Roasted Red pepper
1 Block Firm Tofu
2 Tbsp Basil Pesto
1/2 tub Hummus
Separate the squares, cut into 4 and place on a prepared baking sheet.
Drizzle with olive oil, season with salt and pepper and grill until toasted and firm, roughly 10-15 minutes. Set aside.
Cut the Aubergine into 1 cm thick slices and then into cubes
Using a grill pan, griddle till cooked through and slightly charred
Cube the tofu to roughly the same size as the aubergine. Toss in a high heat pan with some oil until golden brown. Set aside and drain on paper towel
To assemble, place some of the toasted squares, spread a small amount of hummus, top with an aubergine cube, a sliver of red pepper and finally a fried cube of Tofu.
For extra garnish, top with basil pest.
