Toasted tuna sandwich

With just a few ingredients, you can whip up this crunchy, good-for-you sarmie. It’s got loads of protein and fresh veggies – a delicious, easy lunch to make on the weekend.

Makes 4 sandwiches

2 cups tinned tuna, drained
2 tomatoes, cored and diced
2 sticks celery, peeled and diced
¼ cup plain yoghurt
2 tablespoons mayonnaise
8 slices Blue Ribbon Classic Brown Bread
¼ cup butter, softened
1 Romaine lettuce, leaves torn
Salt and pepper

1. Place the tinned tuna in a mixing bowl and flake with a fork. Add the tomatoes, celery, yoghurt, mayonnaise, and seasoning. Stir well to combine.
2. Toast the slices of bread under a hot grill or in a toaster until golden-brown.
3. Remove and spread with butter. Top four slices with torn lettuce leaves and the tuna salad mixture.
4. Place the other toasted slices of bread on top and then cut the sandwiches diagonally in half. Secure with toothpicks before serving.
