Mascarpone and berry Sandwich Square toasts

Juicy berries sandwiched between smooth, creamy and buttery mascarpone. A stunning dessert to enjoy on a hot summer’s day.

2 Blue Ribbon Brown Sandwich Squares
160g Mascarpone cheese
2ml vanilla extract
30ml icing sugar, sifted
100g fresh berries, such as strawberries, raspberries and blueberries
Mint, to serve, optional


  1. Combine the Mascarpone cheese, vanilla and icing sugar in a small mixing bowl.
  2. Place the Sandwich Squares into a toaster and toast until lightly golden brown.
  3. When cool enough to handle, open the toasted Sandwich Squares.
  4. Top the warm, toasted Sandwich Squares with the Mascarpone mixture and mixed berries. Serve at once.
