Mascarpone and berry Sandwich Square toasts
Juicy berries sandwiched between smooth, creamy and buttery mascarpone. A stunning dessert to enjoy on a hot summer’s day.
2 Blue Ribbon Brown Sandwich Squares
160g Mascarpone cheese
2ml vanilla extract
30ml icing sugar, sifted
100g fresh berries, such as strawberries, raspberries and blueberries
Mint, to serve, optional
- Combine the Mascarpone cheese, vanilla and icing sugar in a small mixing bowl.
- Place the Sandwich Squares into a toaster and toast until lightly golden brown.
- When cool enough to handle, open the toasted Sandwich Squares.
- Top the warm, toasted Sandwich Squares with the Mascarpone mixture and mixed berries. Serve at once.
